Predominantly whole bunch pressed with the balance pressed after 3 days, naturally fermented in seasoned barrrels. Matured for 12 months before being fortified. Aromatised with locally sourced wormwood, boronia, native pepperberry, kunzea and lavender tea tree and sweetened with bruny island honey. Bottled unfined and unfiltered.
