There are two styles of gin from Shene, this is the un-filtered expression.
More distinct than the filtered version, there's a wave of lemon myrtle and mixed citrus on the nose, with underlying spice. The palate is really different - thick and chewy with rye bread and spice. Not as clean as the filtered, but really complex.
The Shene Estate distillery has a 300 litre Knapp Lewer copper pot still. For gin, the 12 botanicals are macerated in the still for over 20 hours, with the subsequent still run taking 12-to-14 hours. Running off the still at 78%, it is cut to 46% with Tasmanian mountain water.
The botanicals are juniper berries, coriander seeds,Â cassia bark chips, liquorice sticks,Â angelica root, Tasmanian pepper berries, orris root, cardamom, star anise, lemon myrtle, macadamia nut andÂ dried lemon peel.
For the 'A True Spirit' release the gin is filtered through a custom-made tube, which house coconut shell carbon, to create a smooth, silky mouthfeel. Half of the gin is saved and not run through the filter, keeping a thicker, chewy-er texture for the 'Unfiltered' release.
Un-able to pick a winner between the two styles, the distillery team decided to release both through their cellar door. The Unfiltered was awarded a Gold medal, the A True Spirit a silver medal, at the 2016 San Francisco World Spirits Competition.
Shene Estate is situated in Pontville, north of Hobart. A grand colonial estate, as a private residence it has been restored to the point that it is now open to the public. The installation of a distillery has seen the creation of the Poltergeist gin series. It is also home to the Mackey Tasmanian whisky.
