Dr Edge Tasmania Pinot Noir is a blend of Tamar Valley, East Coast & Derwent Valley fruit. It's an ethereal Pinot Noir fermented naturally with only two weeks on skins then pressed to old oak casks, matured for 9 months and bottled without fining. 12.5% Alc.
A blend of all three - 60% South, 30% East, 10% North - with some additional clones and techniques thrown in. Four different clones, lots of bunches, lots of carbonic maceration for more aromatic lift. Gamey, red fruits. Dried rose petals, savoury, sweet/sour on the finish. Zesty, flavours bounce. A sleeper.
