Wild ferment, then lees stirring twice a week before blending tank and barrel components. The tank portion gave gorgeous citrus, melons and florals while the splash of oak provides a lush creaminess and mouthfeel to cushion the driving acid line. Mouthwatering, subtle and fresh.
